I'm looking to put together a very cheap computer so I can slap a couple 250 gb hard drives in it and serve (locally) all my files.

Hopefully I get some good ideas from this thread :)

they don't do any graphics, no music, no video, just basic MS Word type stuff. rarely more than one app running at a time.

I think that's everything. I could get it below $220 with crappy RAM and mobo, but I went with brands I trust.
