I thought it seemed drier when I had it, so a marinade might not be a bad idea. Especially with steaks, as I always think a dry steak seems tougher anyway.Originally posted by: WhiteKnight
Buffalo tastes to me like beef, except beefier. I get to eat it so infrequently I'd probably just go with salt and pepper, nothing to mask that flavor.
