I have an Abit NF7-S mobo and might get a Barton 2500+. When you pop a chip like this in, the bus and multiplier automatically will detect the chip if you have it set in bios?

yes, it should do that
earlier mobos set it to 100MHz FSB but on my NF7-S, it auto detects

Ok, cool. This is also totally stupid but the reason I am asking is because my overclock of 166 x 10 is having issues on bootup and shutdown and I thought that if my board has problems with higher bus then a higher chip would be a problem also.

More likely your previous chip had issues with the higher bus, don't worry about Mr Barton, he loves 166Mhz and up. Check you are locking the PCI and AGP clocks. This can be done on most NF2 mobo's.
