I didn't eat lunch...

That's a great way to slow down your metabolism. You trick your body into thinking it might not see another meal, so it tries to store as many of those calories (as fat) rather than using them.

Eating small meals or snacks every 3 hours is much better for weight loss. It keeps your metabolism peaked. Weight loss can be simply stated as burning more calories than you take in. If you eat one 1800-calorie meal every day, I guarantee you that your body isn't going to burn as many calories as if you have 300 calories 6 times a day. I know this isn't always possible, so here's what I do:

Breakfast: 200 calories (granola bar)
Snack: 200 calories (package of crackers and cheese)
Lunch: 380 calories (Ramen noodles)
Snack: 200 calories (pretzels or wheat thins)
Dinner: 800 calories (usually)

That totals 1780 calories. About 3 times a week I have a mocha in the evening as well, which is around 150-200. So, my daily average winds up being about 1800-1900 calories.
