For about a year i've seen people write "I could care less", in the context :
"I could care less what you think" as in, "f... you and your opinion"

Surely you should be saying "I couldn't care less" ?

Saying you could care less means you DO care.

Am I missing some internet joke, or have people lost the ability to write what they mean?

"I could care less" is just dumb. Please stop using this phrase.

No, you aren't missing a joke. People are just incredibly stupid and this is one of those phrases that is constantly used incorrectly.

Actually, I think sarcasm is implied when someone uses "I could care less".

It's an expression. Trying to analyze the meaning borders on the idiotic. It's like examining "I could give a damn" or is it couldn't?????? How can you give a damn, whether it's could or couldn't? Who really cares. End this worthless thread now. ETWTN. Now I've made a new expression.

The actual saying is, "I couldn't care less", but I've used "I could care less". Not because I said it wrong, but because I was being sarcastic like Shawn mentioned. IIRC, "I could care less, but I'm too lazy to bother" was the way used.

I dont think it's necessarily wrong. As in:

I could care less, but I don't want to put forth the effort because it's not worth it.
