I'd have to say that two of the major components of maturity are empathy and tolerance.

I think someone is "childish" when they focus completely on themselves, don't consider anyone or anything else as being as important as their own immediate wants and desires, and can't see any viewpoint except their own.

Young children have difficulty with the concept of viewing anything with any perspective beyond their own. An example would be a young child who hides in plain view by closing their eyes and thinking no one can see them.

people who talk a lot about how immature other people are, are usually pricks, in my experience. not to mention pretty immature themselves, though in a different way. they're usually the same types of people that don't seem to grasp the concept that some movies are meant to entertain, not make you think.
