any ideas on some good chicken recipes?

yes the bird is dead.

Ive got skin and skinless breasts

italian dressing eh? sounds intriguing

For something fast and easy, dump a bottle of italian dressing on it and bake it.

However, it depends on what kind of chicken it is. If it is boneless, skinless breasts, then I have some better ideas.

Pop it in a casserole dish along with a tin of apricots and a pkt of dried onion soup, tastes alot better than it sounds ! Oh and dont forget to COOK it !! haha

LOL, these guys are hilarious!

Just find stuff you like and marinate it and bake it with it. It can be Italian dressing, butter, garlic salt, and lemon, whatever you have that pleases your taste buds.

I've taken to roasting my veggies in the oven with whatever I am baking. Again, just pour stuff you like on them and bake them in the liquid.

I don't know what you have in your pantry, but a little pasta with butter, garlic salt, and Parmesan cheese is quick and easy. Steam some veggies and you have poor man's Pasta Prima Vera.

im not a chef, so ill just have to go by your description isla. how long should it cook for? i know it should be as long as its not pink inside but how long before it becomes rubbery and tough?

Ah, it depends on your oven and what you bake it in. The oven that I have now is super hot, what a pain! I have to adjust the time on everything.

If you are using glass, it may cook faster. Fortunately, putting liquid in helps protect it from drying.

Try starting at 350 for 35-40 minutes, on the center rack of the oven. Take it out and check it after that... that is the safest way to do it.

I'm sure it will be fine!

Its all depend on what you wan to do with it. Isla suggestion with baking it is a good idea, and there are 1000s of way to bake, barbecue, broil, fry, boil, stew & curry chicken.

Quick South East Asian technique - A quick way to cook skinless chicken breast is to broil/bake it with teriyaki sauce & garlic in a pan. (It takes a bout 5-min with a close lid on medium/high).

A common North American technique - Barbecue chicken breast & drumstick with barbecue sauce in the oven for about 30min.

Isla, suggestion is a deviant of European preparation of fouls ? Greek & Spanish chicken serve with paella is quite a good dish. (Better yet, barbecue lamb serve with seafood paella)

East/West Indian Chicken Curry ? Also a great dish, but it take a long time to cook because you need to stew the flavor into the meat. (Server with West Indian rice or bake bread fruit)

Thai Land trademark - My favorite is Thai Chicken Satay with spicy peanut sauce, serve with rice & steam vegetable. (Similar to the first way, but it take an extra 1/2~1 hour of sauteing the chicken prior to cooking).

Satay ANYTHING rocks! Mmmmmmm.... now I'm getting hungry, but lucky for me I have the ingredients for Thai Village Noodles (Pad Thai?). God, I love rice sticks...

(heh, can you tell Thai is my favorite cuisine?)

Isla method on cooking with liquid is a good suggestion, or you can use 2 half slices of onion in the casserole/pan as a moisturize medium. (Any fruit could also do in a pinch, but the onion is best because it sweeten up your chicken)

Thai is also my favorite food...Maybe we could talk about photography, cooking, computer & flowers over a cup of lemon grass & ginger tea some day ;)

well since ive got two types of chicken here, and the popularity of this thread leans to baking it, im gonna try islas suggestion of italian dressing the bird and also gonna give a shot at some Thai lovin........
 

I am a big chicken fan. I buy a 10 lb bag of boneless/skinless breasts every month from Sam's Club:). I either bake it, or cook it up in the frying pan. Usually BBQ in oven. One of my personal faves is Caribbean Jerk seasoning, pretty cheap, SOOOO good. Italian dressing is good. Teryaki marinade is good.

Cutting it up and making chicken tacos is great, too. Eating the chicken along with some pasta or rice is good too, say in alfredo sauce or regular Ragu or prego.

Tip: I have a pair of scissors (my chicken scissors) that I use solely for cutting all the fat off my chicken breasts:). That stuff is nasty.
