It's clear that cooking is one of those jobs that you can teach almost anyone to do. It's no surprise that some of the best restaurants in the world have menus created by top chefs, and a kitchen that is comprised of mostly Hispanics. A Hispanic can make a perfect lobster and risotto dish as they can kung pao chicken or teriyaki salmon. If you read books like Heat or Kitchen Confidential, you'll notice that the management and top chefs embrace this fact. In fact, Bordain says in his top 10 list of tips for new chefs or kitchen workers - "learn Spanish"
No offense, but your problem you are (I am guessing) a line cook. Maybe you work the pasta or fry station. At 45, why don't you try to get a more prominent position in the kitchen such as, sous chef , dessert maker, or work front of the house. Perhaps spend $700 on a training course and tests and become a sommelier.
