Back in the days Deer Hunter 2005 was the best hunting game, I think many will agree with me (some claim it is still the best).
But which one is the best today? Especially if you are more after realism and tension rather than arcade-ish stuff.

There are a lot of sort of "hardcore gamers" here, would you even consider looking at a hunting game where it may take 30 minutes (at least the first time) of stalking and calling to even fire your first shot?
