Which case would you choose that is not all metal to keep the weight low and which portable display?

Replacing the HD with SSD would cost additional $50, and you can do it yourself in 25 Mini.

Laptop is out of the question coz it's too expensive and it can't accept a desktop GPU (TB4 not allowed! That plus the TB4 GPU enclosure makes the laptop even more expensive).

Again, no laptops coz they can't be upgraded.
