How would one setup a dialup server or BBS server?

Ya know how you connect to the server by dialing another modem on the other end, right? Well in normal circumstances its a connection, modem to modem, but what if you want to have 3 people connecto to a modem server? Do you have to have multiple modems installed in the server? Are the all connected to the same phoneline? How does an ISP work where they have 1 phone number for multiple people to connect to?

They are pooling their numbers. Lets say its a small ISP with 20 clients. Also, lets say they have a single dial-in number. That number is pooled so when it is dialed there are 10 lines it can connect to (usually all with their own individual numbers that no one sees). The ISP is counting on not having more than 10 users on at once. When they do and their customers complain they need to pay for more lines. Each line goes to its own port on a multi-port modem or multiple multi-port modems.

In your case, if you want all three to be connected at once you'd need three lines and a three port modem minimum or 3 modems.

You need three analog Modems in the server, and three analog Tel. lines.

The fact that you are using only one phone number is meaningless since it is a simple thing to Route the call to the available line.
