How would I hookup a PSone to my PC?

You might be better off finding an emulator, since most video capture cards add lag. That's not a problem for RPGs, but fighting or platformers could be less fun.

I haven't tried it myself, but others have said that the $20 PCI cards with software compression have less lag than a USB device or high-end card with hardware compression.
 
You can try ePSXe, it does run in Vista.

But you shouldn't get any input lag if you use a gaming-oriented device like those made by Elgato.

This cable is primarily used for connecting video projectors with Component-in capability through it's VGA port. It can only function with a VGA port that is either able to recieve or transmit Component signals (Y, Pr, Pb).

Probably won't be an option.

Another vote for ePSXe. Works great on my XP box.

No sir...you can't do it just like that... what you need a transcoder...

Here is the 411 on it...It will cost you..I don't know of any that will make the PS2 look as nice and sharp as it looks on a regular HD capable TV. The process is tricky and the hardware is expensive. Here is a sample for you:

When I used to game on the PS2, I tried hooking up my PS2 to my PC LCD setup through my KVM...I thought it would make life much easier....it turns out....the transcoder I had...only supported progressive scan (480p), if the output out of the PS2 is not 480p it will not show....I felt that the worst, when I tried playing GT4 in 480p. In progressive mode, the menus are in standard definition while the game play is in 480p. This meant I couldn't play the game without constantly switching back and forth. I still have that stinking Vdigi VD-Z3....but it's my fault...I should have known that it doesn't support lower resolutions. But had it not done that it would have made me one happy camper back then.

Most games for the PS2 don't auto switch to progressive scan, you have to go in and switch them every time! Which is a major pita.

My advice, if you want to play PS2 games on a monitor:

1) look around for a decent adapter...perhaps the first one I linked to, it seems to work fine for lower resolutions

2) Do like I did and get a PS3 with BC (if you were going to do that anyways in the future), then you can play your games through an Gold plated HDMI to DVI cable and view your PS2 games as good as is possible.
