How to use my computer to record phone calls?

At work, my headset amplifier has audio in and out (for mic and speakers) for my headset. It's rather nice; I have all my computer's output going to my telephone headset, which I pretty much wear all day anyway.
 
I think this is illegal in most places. Also if you're doing it for legal reasons then you can't ever present recorded evidence without telling the person that they're being recorded, or it being obvious (i.e. you turn on a recorder in front of them, as is the case in interrogations. If it's for fun, have fun. 😛
