The timing on this question is bad since iPhone OS 3.0 is about to come out, but...

You can just run the regular firmware updater, then jailbreak the phone again with the appropriate version of QuickPWN.

The iPhoneOS 3.0 jailbreak isn't out yet, so no one can answer that question. However it's likely that it will be similar to how it was on 2.xx - the OS is on one partition (taking up about 500MB), and the user data is on another (taking up the rest). This of course is something the OS does, not the jailbreak.

so my question is: what do I need to do once it is released (assuming same process) to keep my data (texts photos ect) and get the new fw?

Restore the phone to to factory settings in iTunes. Once that is done, it will ask if you want to restore your data from backup. When you do this, all your data will be restored. Then, upgrade to 3.0 like you would normally do. The jailbreak again.

-updated to 3.0 via itunes (normal way)
-2G became locked and unjailbroken
-downloaded redsn0w, both the 3.9 and 4.6 bootloaders, and a copy of the iphone 2G 3.0 restore file
-ran through all the steps of redsn0w
-jailbroken and unlocked iphone 2G!
