How to take better shots of falling water?

to get rid of the shadow you can either flash it from the side do there is no shadow, use a 2nd flash to blow out the back so it wont matter or if its possiable get some blash cloth that eats light and set it far anough back so that the light wont make a shadow from a direct flash

Thanks for the ideas. I'll have to change the direction I'm shooting from so I can have a darker background further back. What color background do you recommend for water?

really depends on what kind of shot you are going for, normally someting lighter is used as it wont show up well on black

ive seen lots of whites and blues used for backgrounds on water shots

Change the angle of the shot. Use fast shutter speed and wide open lens to create a shallow DOF and blur out the background - i.e., "bokeh."

Here in Arizona with a belnd of CAP water, that is a never ending problem. As long as they work . . . :)
