How to store baked potatos?

Leftover potatoes are yucky, or at least I've never found a good way of storing them. If you're thinking of saving time and electricity, use a microwave instead of conventional oven.

No, microwaves are just faster! 5-7 minutes depending on size of spud and microwave. Although I suppose you could do most of the cooking in the micro, then finish it off in a toaster oven.

baked potatoes done in the microwave only, UGH the skin comes out too rubbery. I stab a few times with a fork, Microwave 5 minutes then toss in the oven for about 45 minutes.

Do you eat the skins? I eat the skins.

I kind of clean them agressively, though. I mean, I use the scrubber side of the kitchen sponge and scrub the skins down pretty thin. Maybe that's why the microwaved skins don't bug me so much ('cause they're really thin). It could also be because I haven't had an oven baked potato in like 15 years.

I eat the skins, I like them a little crispy, not crunchy but a little snap is nice. In the Microwave you cannot achieve this. I'm sure if I did nothing but cook them in the Microwave I would adjust to the rubbery skins.
