How to sharpen knife?

Wait..

You mean it's basically like a long cylindrical file?

I always thought those were to sharpen the blade too.
 
No, it basically realigns the edge like Andy said.

To sharpen a knife you could use a wetstone. That's what I do. It's difficult at first but once you figure out the right angle and technique it's not too bad. When it comes to something really important to me like a good chef's knife I have that professionally sharpened.

When you use a knife the edge does not stay straight.

Instead of this: -------------- it will look like this: -__--_--___----__--

The sharpening steel, if used properly, will straighten that edge back to ------------------------

Over time, the blade loses its "straightness" for whatever reason. It occours thru the normal course of use. The "sharpening steel" is a misnomer as all the rod does is make sure that the blade itself is straight on both sides, however the blade may stll be sharp or dull.

If you looked at a point-on cross-section of a knife it would generally look like a triangle. When a knife is dull, instead of having a point, it will have a rounded top. When it is out of alignment, the instead of having a perfect point, the top is bent to one side or another. A sharpening steel unbends the top, but does not turn a rounded top into a pointed top.

To truly sharpen a knive, a whetstone is your best bet. I've got a sharpening system made by Lansky that works great. These systems allow you to clamp your blade into a guide system. You moves the stone over the blade, and the guide keeps the angle constant. You can sharpen a lot of steel pretty quickly, and get an excellent edge on any knife with these systems.
