Is it possible using WIN/2003 or WIN/2000 to share a directory such as \\boxname\directory , but then deny a specific file in that directory to be viewed when accessing using \\boxname ?
You can deny read permission to a specific file with NTFS permissions. Can't really hide it.
Share wise you can hide the whole share by using a $ in the name. Keep in mind the share still exists and will have whatever permissions you assign it just won't show up if you open an UNC path to the server.
Open \\<yourcomputernamehere> Then Open \\<yourcomputernamehere>\c$ to see what I mean.
