How to setup a surround sound system

I have tried to setup a sound system for my inlaws since I am the only one with an electrical engineering degree. I do have surround system in my house, but I only use it in stereo mode, ie just 2 large front speakers. Knowing nothing about how a surround system works here is my question.

1. If I were to buy a packaged system, it appears there are 5 small speakers plus a subwoofer. Is this the better way to do the sound system, or can I use 4 large speakers plus a smaller center speaker to achieve the same effect? Can I achieve the same bass effect using large speakers or do I need a subwoofer.

2. My inlaw's has something called a Bose system ( which looks like a subwoofer which accepts input from the left and right channels and outputs right, left, and center channels). The speakers supplied are 3 tiny speakers. The question is what is this Bose system, and do I really need to use it since the sound system already has output for front left/right/center, back left/right. Currently I connected the front left/right to 2 large speakers. The front/center to the tiny Bose speaker. The back left/right channel to the Bose system with the output to 2 tiny Bose speaker.
