How to set up multiple users on Outlook 2003 and 2007?

I can't believe I have never had to set up multiple users, each with their own email, on Outlook.
Do I set up profiles? I don't even know where to begin.

Is there a reason each user doesn't just have their own OS login?

Control Panel>Mail>Profiles
Better to use multiple windows accounts though...

Thanks all. I guess its Mail-Profiles, but like Loup says individual user accounts would be easier.
