How to set the bitrate on iTunes?

So I just got an iPod and trying to rip some CDs
Anyone know how to set the bitrate on iTunes?

edit/preferences/advanced/importing/setting

Under General tab, I suggest you UNCHECK "keep itunes folder organized."
I don't like the way it organizes the music when you have many single mp3s files.
