For most Gigabyte mainboards you press Ctrl-F1 to access the hidden settings, the manual should tell you the exact keys to access them though.

My last two Gigabyte boards did not mention the Ctrl + F1 option.

At the main screen when you hit the Ctrl + F1 it does nothing? Are your keys working on your motherboard? Is your keyboard plugged into a USB or into PS2?
