Have another company call them to verify your employment. That "other company" being one that you have interviewed with looking to hire you.

That is why you specify to your potential employer that they are not to contact your current employer ...

It also covers your bases so that if you lose your job because of it, and the potential employer does not hire you, that is actionable in a civil court.

Legally, they can only say that you are/were employed by them, how long, and I think would they hire you again.

Hey, I happen to like my current boss - she's cool, and doesn't even act like she's my boss. Just today she was going downstairs to get some coffee, and I told her to bring me some, and she woulda done it too if I didnt say I was just kidding. :p
