How to properly update iTunes

My girlfriend has the whole itunes and ipod thing goin, so that their music libraries are tied to each other. However, her itunes is really old, version 5 I think. How do I update it to 7 without screwing anything up?

I've heard some horror stories about itunes deleting someone's entire library, that's why I don't use it.

It will not delete your entire library unless you tell it to, it will mess up your music's locations if you let it organize it for you, which again you are prompted about. Uninstall it via add/remove programs and watch for pop up boxes that might ask you if you want to keep your files, chose to keep them and install the latest from apple's web page.
