Ok nothing is going to protect you against multiple attackers but if it is just some moron at a bar or punk kid then Brazilian Jiu-Jitsu is the way to go. Almost every fight ends up on the ground. BJJ will teach you how to submit or choke out an opponent easily.
If BJJ is not available in your area then I would train in Boxing and wrestling.

I used to instruct martial arts and I taught BJJ and muay thai kickboxing, I can tell you that those two are going to help you out a lot. I would also suggest Jeet Kune Do, because it's basically BJJ + MT without a Gi, which will help you out a little bit. But seriously, those are going to prepare you for the best. I would also suggest a school that takes a long time to move up in belts. That way you're going to be assured that the people who are above you in belt rank have been training a very long time and can give you some wonderful insight into technique which will actually improve your game.
Seriously though, a lot of martial arts are going to incorporate some BJJ into them now, because that's just the way it's going, but really, one of the most important things is to find a school that your comfortable at, and to find a school that won't let people advance in belt rank super quick. That really helps weed the people out who you don't want to be there in the first place.
