How to make hash browns?

You know, the ones you get at any diner. Do you have to bake the potatoe first before putting it into the skillet?
 
nope. you need vegetable oil (or bacon fat if it's on hand. the thicker the fat or oil, the better the taste) and potatoes.

wash and peel the potatoes. next grate the potatoes (like with a metal cheesegrater). when you've got a huge bowl of potato shreds, pick them up one handful at a timeand squeeze out all the water. when you've got a mound of squeezed shreds, form them into a patty(no more than a half inch thick) and slide that sucker into your oil. let it cook until it's slightly lighter than golden brown. believe it or not, the browns will look browner out of the oil than in it. dont ask me why.

i didn't know your suppose to squeeze out the water! thats my my hash browns are so nasty. thanks!
 
If you don't squeeze out the water, the moisture starts boiling/steaming, hence the nasty hash browns.
 
It also helps if you put them in the oven after frying (crisps them). Also, don't forget to salt and pepper the potatoes before frying, the salt will help to draw out more moisture.
