The Gigabyte motherboard of my old PC has 10 SATA sockets. I have them all set to AHCI, so can hotplug harddrives from #1 to #8 [connect a HDD and it appears in File Explorer]. #9 and #10 allow booting, so are functional, but do not 'allow hotplugging' although the AHCI option had been set. Can I make them hotpluggable somehow ?

Probably not if the BIOS / controller does not support it, it's very likely port #9, #10 is on different SATA controller.

I have an ECS Z97-PK (just 4 years old) motherboard and I had no way to make the SATA drives hot pluggable even though BIOS has been set to use AHCI, even though it's INTEL Z97 chipset.

what is that mean hot pluggable ????
You can leave the computer on when you plug or unplug a drive or device. The system will just recognize that a device has been added or removed.

Server systems, for example, are usually more "hot swap" / "hot plug" capable because they are almost never shut down. So they are made so that many of the components can be swapped out on the fly.
