How to hem dress pants?

I heard you can't use an iron on dress pants because it'll ruin them? How the hell are you supposed to hem them then?
Could I use a piece of paper to take away a bit of the heat, and so the iron won't stick to the cloth.

Then I make small stiches to make it stay right?

Doesn't hem mean sew?
Use a lower heat setting
