how to get my website's visitors' stats?

Hi all,

I've read that it's possible to save to a log your visitors' ip address, where they came to your site from, page usage, time spent there, etc. I'm pretty unfamiliar with these sorts of features -- can anyone suggest some simple HTML that will do this?

Also, how is it possible to see your visitors' cookies (I'm just curious)?
