I believe iTunes, by default, adds iTunesHelp.exe to the startup list. It also adds the iPodService to the list of services set to start automatically.
I've disabled iTunesHelp from startup and disabled the Ipod service (I don't use an iPod) and iTunes works fine.
You can change your startup items by going to start -> run, and typing msconfig. You go to the startup tab and you can select which programs you want to boot at startup.
Also programs like WinPatrol and Spybot let you choose what boots.
