There's a lot of google junk I don't even want on my phone like Google+, but it won't let me uninstall it without "going back to factory version" I just want to uninstall it. How do I go about doing that?

Also with this latest update, it seems they got rid of the photo gallery, is there a way to get this back or any good alternatives?

Aside from disabling it (not what you're asking, i know), the only way to uninstall factory junk is to have root access. I've deleted many system apps this way.

Even if you do that on those apps you get eventually get to a place where you can disable it at most.

Disabling apps has actually been a cutting edge feature for Android. iOS looks to catch up with iOS 10.

And it's not as if you'll gain any usable storage space. Disabling is what you want to do.

This.

Restoring the factory version is deleting the app in the user space.

The original version is in the system partition and even if you delete it you don't get any usable storage back.

When a factory installed app gets updated it "moves" the app from the system partition to the data partition.

Disabling the app and restoring the factory version is functionality exactly the same as deleting the app unless you habitually resize your partitions (don't do that).

(Disclaimer: all or part of the above could be bollocks as I've not slept for 48 hours)

This may be related to me disabling stuff, but I keep randomly getting a message saying "unfortunately hangouts as stopped". Of course it stopped, I probably disabled it at some point. is there a way to stop getting those messages?

Basically I'm just trying to "Degoogle" my phone as much as possible. Lot of stuff I simply don't use and it is probably collecting personal data, I just want to stop that stuff as much as I possibly can.

You need to flash the slimmest AOSP ROM you can find then. Theres a lot of Google stuff that you can't disable without seriously breaking your OS in a standard ROM.

Also you shouldn't be getting that message if you've disabled hangouts. Check to see if you've disabled it.
