how to cook chinese sausage

So I just bought some chinese (taiwanese??) sausage, I think its called "lap chong" or somehting like that..

its the reddish looking sausage..

so how should I cook it? just fry it on some oil??

or steam it??

my friend put in fried rice and he just diced it and threw it in a non stick skillet with just a little bit of oil and garlic

Don't...just steam it with your next batch of rice. You can cook the leftovers in a fried rice, as that's all that really belongs in FR.

And it's great stuff...I personally favor the darker "shiang tsang" (mandarin phonetics...I don't know the correct translation :p) a little more, but both are great.

so as I cook rice, I put them sliced on top of them???

is this when the rice is cooking?? or when the rice is cooked??

I use a rice cooker by the way

Just put them ontop after the rice is done and let them steam for a while, whole/unsliced. Remove and then cut up afterwards.

I love those things. My mom usually steams them in the rice cooker, or slices them and adds them to rice, along with other meats and soy sauce when she's making sticky rice *drool*

hmm I am afraid that the sausaage will not work properly if I just put them on top of the rice in the rice cooker...

or will it??

or maybe I will just fry those suckers :evil:

Do not fry them unless you like chewing something like sweet leather. Throw them in the rice cooker about 15 minutes after you press the button(when the bubbles start to disappear) and don't open the top until 20 minutes later. My kids love it when I steam chicken,mushrooms and chinese sausage for dinner.

No oil, just put it on some heat. If you want all your pieces of rice to taste of the sausage goodness, dice it and mix it into the rice before turning up the rice cooker.

just throw them in a rice cooker right after you pushed the button. on top of the rice is fine. don't worry it'll cook just fine.

NO DO NOT FRY THEM. otherwise they will be too dry.

to store them, you can put them in a fridge or just about anywhere dry. they are already baked to dryness so any place dry would work. i put them in a fridge

trust me, im a kid who have to cook my own din din when i lived outside...

*edit: oh do not cut them up in any way before you throw it onto the rice. it'll lose the juicyness and shrink otherwise. cut them up AFTER the rice is done.

arghhh I already cut them up and put it on the rice

I put them midway the rice is cooking, I hope I dont get food poisoning

this is not the hard type sausage, its still kinda soft.. I bought it from a restaurant that is famous with its chinese sausage

it should be fine. you'll just lose some sausage juice (oil)... well in that case the rice will taste better i guess

and it should cook better if you dice them up and throw them in the rice cooker.

and kinda soft... if i were you i'd store them in the fridge

and the traditional chinese sausage are usually the hard ones. they kill a pig around winter and then sun-dry them for a month or so, taking all the water out and makes them easier to store.

just steam it for like 20 minutes, uncut.

as far as i know you don't have to keep it in the fridge at all. it's "preserved" meat so it doesn't go bad easily.

eh i think i had that kind before... if it's soft you can pan fry it too.
