How to cook a bison shoulder

I perused the internet last night and didn't see anything all that tasty.

I have a crock pot, an oven, and a big green egg.


Suggestions?

Hmm... That was my first thought but everything I've done low and slow had lots of fat to help retain moisture. I'm a bit concerned about the bison as it's very lean...

Not for bison shoulder, not nearly enough fat. Something that lean and tough is going to need a marinade and a slow, moist cooking method like a crock pot. I'd look for beef pot roast or beef stew recipes that look tasty and then adapt them a little.
