Is there an across the board time schedule that itunes uses? Or do some shows show up at different times than others?

Depends entirely on the network/station that airs it.

Some release the following day, some release three days after... some release whenever they feel like it.

Are the big shows usually better about updating? (ex. The Office, Lost, 30 Rock)

NBC no longer uses iTunes. And the shows are free. They are usually up 24 hours (or less!) after their first air.

ABC plays episodes of LOST on their site for free, but sometimes they don't have them up until late in the weekend. Maybe they've gotten their crap together. I think you can still buy HQ versions on iTunes, but I don't know how fast they go up.
