How should I cook salmon?

I have a nice salmon fillet that I am making for dinner. Any suggestions on how to prepare it and what to have as a side dish?

raw with wasabi and soy sauce 😀
 
Just some oil, some herbs, throw it in some aluminum foil, wrap, oven. 🙂 Unless you want to put more work into it and get fancy...

But salmon done any way's gonna be good. As for a side, some night light veggies, like broccoli/cauli, squash, and maybe some nice risotto (sp?).

That's probably how I would do it.
 
Definitly thaw first. Then there's many choices, some lemon and garlic mmmm, maybe wrapped in foil in the oven or BBQ or on a pan.

I'm thinkin a thin layer of mayo with some garlic salt... how does that sound? I found the recipe online....
 
Here is the recipe

Salmon is plentiful here in Ketchikan. We're known as the "Salmon Captial of the World".

1 whole salmon fillet
1 lemon
1/4 cup mayonnaise
Salt & pepper to taste
1 onion, sliced

Spray baking dish with non-stick canned oil. Put fillet in pan, skin side down. Salt and
pepper lightly. Spread mayonnaise over fillet, salt and pepper. Place onion slices on top
and squeeze fresh lemon over top. Pour wine in the bottom of the pan and cover. Bake
at 350 For approximately 20 minutes or until salmon flakes.

 
So should I just wrap it in foil and bake, or put it in a pan with a little wine at the bottom.... what kind of white wine should I use?
 
Poach it!

Easily the best way to cook salmon - in culinary arts we probably cooked salmon a few dozen times... this was the best way to cook it IMHO.

Brew a small stew of chicken or beef broth, throw in some herbs and vegetables (some onion and tomatoes), then use about maybe half a cup (fill a pan to about halfway up the salmon) and put an aluminum foil on top of it. Simmer this for about 10 minutes then throw it into the oven (pan and all) for another 5-7 minutes.

Oh man getting hungry just thinkign about it.

Poaching would be nice, but is rather difficult to do. (actually it is really hard to do unless you know what your doing...very easy to overcook when poaching)

Baked is fine as well, but can be bland.

But I'd rather put some thyme, (maybe some combo spice like emerils or season salt) salt, pepper on it....heat some olivie oil to just about smoking...sear skin side down until it starts to barely turn color or curl...turn over and turn heat down just a bit to finish cooking (this whole process doesn't take very long...4-5 minutes depneding on the fillet.

That sould turn out a nice medium salmon...

Deglaze pan with white wine, capers and some lemon zest, salt pepper...reduce.

Serve with asparagus spears blanched in boiling water and crisped in the pan that you have removed the sauce from.

voila!
 
Thanks for all the suggestions! The salmon is now in the oven. Nothing like a pound of salmon with some german white wine for dinner 😀

Althought instead of German WINE....i'd prefer a German man....
