Right now I've got a 2500+ running stock everything. With the fan on low it idles around 38C and maxes out at 51C, with the fan on high it idles at 33 and maxes out at 40. How big of a boost in temp am I likely to see? I was thinking 5-8C, but I dunno.

Just see what it'll do by staying under your set goal. Pumping up the v's will effect it most

Definately, I agree with this. Upping the voltage caused the most temp difference. When I started ocing my tbred-B, I got an increase in about 2C for FSB adjustments. When I had to up the Voltage, from 1.5 to 1.75V, i got a temp increase of 6-10C. At 210x10.5 @ 1.75V I run at 43C idle and 47.5C load

There's only one way to find out- do it and look at the temps you get.
