I've heard paper thin, and I've heard thickness of a credit card, and the guy at radio shack said evan thicker than that.

As thin as possible but not too thin since the primary purpose of the thermal compound is to fill in the minute holes or imperfections when the heatsink base and your processor core comes in contact.
