How much past the expiration date would you drink your milk?

FYI, the date on milk cartons is considered the "SELL-BY" date. That means the milk, assuming proper storage, should last about 5-7 days past that.

Figure the best time frame to finish that carton of milk is within 2 weeks after you BUY it. (I don't know where you buy your groceries, GG, but at the Ghetto Ralphs on Adams, they tend to have milk that expires in 4 days so be careful.. :p)

It's fantastically simple. I bought acidophilus and bifidus (and others, I'm not sharing my secret recipe) cultures and I just warm up the milk to roughly 42 degrees Celcius and then add the culture to the milk. Wait 12 hours and you're set.

If you have no place to buy culture or dry bacteria (hey, not everyone is a science geek), then the simple solution is to buy yogurt. Unless yogurt is really old, it will have live and active cultures inside. You can just add that to the milk. Oh one thing though, make sure you whisk the yogurt in with some of the heated milk so it all dissolves. Then you can pour the milk-yogurt mixture back into the milk and you're done.

You can also make cottage cheese from this or you can use rennin to make cheese or a combination of the techniques.

Ahh, the wonderful world of milk. I think I'll go cook something right now.

Interesting info linux boy!

GG- the date is the sell by date, but I've found that:

open cartons go bad before closed cartons, no matter the date
colder fridges keep milk longer
lower fat content milk lasts longer.

One trick is to by two half gallons instead of a full gallon. Keep one sealed until you need to use it, and it will last longer than the gallon would have.

I'll drink milk up until 2-3 days before the expiration date. I don't mess around at all.
