How much overhead should a power supply have?

I've been out of the game for a number of years and am getting back into building my own rig (http://pcpartpicker.com/p/GZyjrH if you're curious). Based on that and leaving room for potential SLI in the future, is appears that a 600 watt PSU would be enough...but is there a certain threshold of overhead that you should give a PSU?

Thanks for what might be an obvious question, but I can't seem to find an answer.

But don't cheap out on it even then, some perform better than others.

Even a higher wattage cheap one won't do it's job well.
