How much is 20g of rice?

Yes, I'm doing the Atkins diet and I like to eat rice. Please help me out. Right now how I am trying to cut back is by using an icecream scooper to scoop two scoops of rice. Previous to this I used to just scoop the load of rice out of the rice cooker using a rice spatula type of device.

Anyways, I would like to know how much is 20g of rice as far as portions go.

Of course it's healthy.

You're hard pressed to eat any edible raw plant matter that isn't good for you.

As for vitamins and minerals, it appears that eggplant is high in Potassium and Vitamin A, with much smaller levels of everything else.

You could stuff your mouth with eggplant all day every day for a month and you wouldn't gain a pound. 😛

But seriously, a serving of eggplant contains 5g of carbs, hardly significant.

Zucchini contains ~3g carbs.

Seriously though. Eat as many fruits and vegetables as you want. It's simple, processed sugars and starches that you want to avoid.

20 grams before cooking or after cooking??
Big difference - about 3 times as much if before instead of after.
 
Oh, and 20 grams would be 1/50th of a kilogram... so, it's 1/50th of 2.2 pounds. So, 2.2/50 darn it... I'll just turn on the calculator...

.704 ounces.

Ok, look...

In 1/2 cup of uncooked long grain white rice, there are 74g carbs.

1/4 a cup would be 37g.

1/8 a cup would be 18.5g.

1/8 a cup is 2 tablespoons.

Rice isn't 100% carbs. In a 100g serving, there are only ~81g carbs.
 
Cooked...

There are 45g carbs in 1 cup of cooked long grain rice.

1/2 cup would be 22.5g.

1/2 cup is 8 tablespoons.
