What's the difference between the paint levels? All I care about is durability.

IF you want it to look good and not flake off in a year or two, at least $2000. To paint a car properly you have to disassemble the whole thing, strip off the old paint, and generally do a ton of labor. For $200 you get someone to put some paper over your windows and then spray the car with whatever color you asked for. They wont do anything to the paint underneath at all, and they wont even remove the emblems from the car, they'll just paint over them.
