I've been going to the same barber for six years, and he's the only one who works in his shop. There aren't any other employees. A haircut there costs $15, and I usually give him a 20 and ask for $2 back.
I think 20% is plenty for a one-man operation, especially considering he doesn't make an hourly wage - he just takes in whatever he makes.
