How much do Radeon or GeForce cards accelerate Photoshop or Maya?

And if not... what kind of video card do I need to get better performance out of Photoshop and/or Maya?

Vidcards don't do much if anything for Photoshop. Maya is another animal though.

Depends on what you got and what you use Maya for. Nvidia based cards generally work better and have fewer bugs, but I've used ATI based cards with out major issues. Other hardware makes a difference as well, like Dual/Quad Core cpus and large amounts of ram.

I'm only a light user of Maya though, so perhaps someone that uses it more can/will chime in with their experiences.

You'll probably get nothing for Photoshop unless Adode have made it like Adobe Reader which renders the contents through hardware 3D acceleration.

PhotoShop CS3 on Vista supposedly has GPU acceleration for certain functions, but I haven't seen any reviews on how much of an impact it makes.

Right. As it stands, GPU will do nothing for you in Photoshop. It does a little bit for Premiere or other NLEs, but for Maya it will make a big impact, especially if you have a Quadro (or GeForce modded into a Quadro), as this enables full professional level OpenGL acceleration, and will help you out a LOT in Maya.
