How long do you boil chicken for to make chicken soup?

    What heat settings and time? One of my favorite meals is simply rice + chicken soup, the chicken soup simply being a whole chicken + water + salt + big pot.

    low heat for a couple of hours, 2-4 hours on low heat, just barely boiling

    The longer the better. Make that 2 hours.

    So simmer covered for 2-4 hours?

    one whole chicken (take the bag of guts out)
    3/4 cup diced onion
    3/4 cup diced celery
    1 tablespoon minced garlic (optional)
    1/2 teaspoon finely chopped fresh tarragon leaves
    2 teaspoons finely chopped fresh parsley leaves

    big stock pot
    enough water to cover the chicken

    low heat, covered for 2-4 hours

    then if you want pasta, boil the noodles seperate and add and let simmer for another 20 minutes

    eat it up yum

    be careful, if you boil it too long it it gets that marrow taste in the soup. I hate that chicken marrow taste, it reminds me of wood.
