I made a batch of fresh pesto in august. Still looks and smells fine.

I was thinking the olive oil is like a preservative.

Isn't there like a "best used by xx-xx-xx" type of marking? If not, I'd go by the sniff test. With any luck you'll feel ever so slightly sick and you'll get yourself a nice 5 day weekend. If you're already on vacation, however, I'd advise not taking the risk.

Oh yeah I missed the first sentence there. I googled "does pesto go bad", and Yahoo answer says yes(in like 2 weeks, because of cheese).

thats the thing. parm or pecorino are hard cheese. that have extensive shelf lives. Plus havent you had those stuffed peppers with mozz and prosciutto. They sit in olive oil and can last years.

I guess it depends on how well the container was sealed. If it was airtight it should be fine I guess. Still it's pretty old... I dunno, roll the dice.

usually we top it with olive oil and stick it in the freezer, lasts for months/years.

why is it so hard? Just smell it... if its smells fine, then taste it, if it tastes ok, then eat it, if you dont puke or get ill, then its fine.
