I'd like to buy a mini PC with a Rembrandt processor, 64 GB of RAM, a 1 TB SSD and Windows 11 preinstalled.

I'm tempted by this one from Minisforum but I haven't heard of this company before. How are they?

I'd get an Asus PN53 instead but I haven't found anywhere that sells it prebuilt with the specs I want.

AFAIK, they've been around for a while, and some of their machines were really well reviewed by some of the big sites (can't remember if it was The Verge or Ars Technica). So you should be OK.
