I'd say it's more about controlling their future moves/options rather than predicting them.

Books, and a masochistic dedication to the game.
Source: two "friends", both Masters, who i used to hang around with for far too long. Chess erodes you, becomes you whole life. I can rarely recall seeing either one of them not reading a book of moves.

Record your games. Afterwards, you can review them to find "where did it all go wrong?". Also, take a look at your opponents moves and figure out WHY did he make that move?
