How do you roast peanuts in shell?

Got me some peanuts from Texas Roadhouse the other night, forgot how freaking good eating roasted peanuts right out of the shell are. How do you roast them in the shell? Just put them in the oven and cook then for a certain amount of time at a certain temp? How can you make them nice and salty inside the shells when if you apply salt to them it will just sit on the shells, which you (or at least I) don't eat?

Dry-roasting peanuts is a common form of preparation. Dry peanuts can be roasted in the shell or shelled in a home oven if spread out one layer deep in a pan and baked at a temperature of 177 °C (351 °F) for 15 to 20 min (shelled) and 20 to 25 min (in shell).

Boiled peanuts are a popular snack in India, China, West Africa, and the southern United States. In the US South, boiled peanuts are often prepared in briny water, and sold in streetside stands.
 
There's no need to wait for the carnival to come to town or hunt down a street vendor—you can easily make roasted peanuts at home. It's incredibly easy to do, and it's hard to beat the flavor straight out of the oven.

There really are no tricks to roasting nuts. The biggest concern is the timing because you'll need to roast the ones in the shell a little longer than peanuts that have already been shelled. Either way, it takes about 30 minutes, and you'll be crunching in no time.

The only items you need are peanuts and a shallow baking dish. Raw, dried peanuts are the best for roasting. If all you have are green peanuts—those that have not been dried—you'll want to boil them instead.

Your dried peanuts can be shelled or unshelled. When using peanuts in the shell, sort through them before you begin. You only want to roast the ones that have clean, unbroken, and unblemished shells. Also, they shouldn't rattle when you shake them.

A convenient snack, these peanuts are perfect to take with you on road trips, hiking adventures, or days at the beach. Once you learn how to roast peanuts, you may start to see other possibilities: It's a great prep step before making amazing homemade peanut butter. All you need is a food processor and something to sweeten the blend. Use your butter in delicious desserts or simply enjoy the freshest peanut butter and jelly sandwich possible (with homemade jam, of course).
 
I kind of like boiled peanuts. At least the ones that come in a can. It isn't my favorite by a long shot, but I get a can every so often.

Thanks everyone! So, cooking them seems easy enough, you basically bake them it sounds like. Curious - might they taste any better smoked on the grill?

Then the most important question is - how do you do the whole salt brine thing? I do NOT want anything resembling boiled peanuts. How exactly do you work that into it?

Peanuts in a bottle of cola IS fairly weird looking ... I could see it potentially tasting good though! (sweet + salty/savory)

The thing I don't like that much about boiled peanuts isn't really the flavor though it's the texture!

Makes them like slippery, slimy little beans! 😳
 
Roasted and Salted Peanuts in the Shell


INGREDIENTS
  • 1 lb peanuts raw and in the shell
  • 1/2 cup salt
  • 8 cups water
INSTRUCTIONS
  • Bring water to a boil in a large pasta pot. Dissolve the salt in the water and add the peanuts. Keep them submerged in the brine by taking a plate or pie pan and setting it on top of the floating peanuts. Stir them once every hour over the next 5 hours. Strain in a colander and rinse only lightly.
  • Place a cooling rack on a cooking sheet. Place the peanuts on the rack in a single layer and allow them to dry for 3 days. Stir occasionally.
  • Preheat oven to 350 F and roast on rack for 15 to 30 minutes, stirring at the 15 minute mark. The peanuts are ready when they start smelling.
Apparently the vacuum isn't actually required to make your nuts salty!
