Mature = mah/muh + chur
You don't say maturation like "mah tur ay shun", that would sound ridiculous.
Nature is pronounced nay chur, not nay tur

English is notorious for having inconsistencies in pronunciation with respect to spelling, though. Saying that one word should be pronounced in the same manner that another word is pronounced by referencing its spelling is totally unreliable.

I've heard all sorts of pronunciations of "mature"---this is what I've heard, which is what dictionary.com lists as pronunciation variants:

muh-toor
muh-tyoor
muh-choor
muh-chur

edit: I should clarify. This happens to many words where they put the emphasis in a different place to sound distinguished. *vomit*
