Just practice.
If you are using kb and mouse, use the default controls, but turn both the keyboard and mouse sensitivity all the way up on the air controls tab.
After a couple of hours of practicing, I was able to fly around pretty well with kb and mouse.
After a couple of weeks of playing, I got to be very very good at bombing. I could get a direct hit on a moving tank at least 50% of the time.
After flying with kb and mouse for months, I got tired of getting totally owned in dogfights so I bought a Saitek Cyborg Gold joystick.
I definitely prefer the stick. It is much much better for dogfighting. But it does take more practice to perfect your bombing aim with the stick.
If you get a stick, don't set the twist to roll as someone mentioned above. You want the x-axis to be your roll and the twist to be your rudders.
All in all it just takes practice.

I assume you are talking about DC.
Otherwise, I don't know what you mean about the planes being too fast for the maps.
In DC this is true on some of the smaller maps, but the bigger maps are perfect for DC. Gazala, El Alamein, Midway, Wake.
